Chef and owner Mark Cupolo has been in the industry for over 35 years. Opening and owning Victor Grilling Company for ten years, opening Max's Chop House as their chef for a few years to then opening the doors at Rocco in 2008. Mark attended CIA in Hudson Valley in New York. Mark's creativity and experience has brought simple yet very delicious  food to Rocco in Rochester NY.

Edgar Gonzalez has worked alongside Mark for many years. Starting at Max's Chop House to opening the doors at Rocco, he has been a staple part of our team!  

Brahyam Mancebo has worked in the business for over 17 years. He started with Mark and Edgar at Max's Chop House and then eventually made his way to Rocco. Starting as a dishwasher and working his way up through the positions, he know is Lead Chef in our Rocco kitchen.
